The sun is out on a cool Saturday (our first in November) and I’m in a cookie baking mood. I found this Lemon Burst Cookie recipe on Pinterest (thanks to Cheryl at TidyMom.net) and thought I’d give it a try.
- 1 box Lemon Cake Mix
- 1 – 8 oz container of Cool Whip
- 1 egg
- 1/3 C powdered sugar
- Preheat oven to 350.
- In medium bowl, beat cool whip, egg and cake mix until well blended. (Dough will be thick and sticky).
- Drop by teaspoonfuls into a bowl of powdered sugar and roll to coat.
- Place on parchment lined cookie sheet and bake for 10- 12 minutes.
These cookies are soft and chewy with just the right amount of tangy-ness! I’ll enjoy a couple today as I am engaging in one of my guilty pleasures! I’m watching the Countdown to Christmas Preview Weekend on the Hallmark Channel. There are so many cute, funny, and tear-jerker holiday movies that I’ll enjoy watching as many as possible for the next two months. I think there are about 12 new ones this year and I’m sure I’ll see most, if not all of them.
