This morning I woke up to a snowy day! Yesterday it was freezing cold with wind chills below zero, but there was just a dusting of snow blowing around. The roads were completely clear. Today? A world of white! And a Saturday too! With nowhere specific to go and nothing I had to do, I decided today would be a baking day.
- 1 can crushed pineapple
- 1 C sugar
- 3 T cornstarch
- 1 egg
- 1/2 C milk + 2T cream of tartar
- 2 C sugar
- 1 C melted margarine
- 2 t baking powder
- 2 t baking soda
- 1 t vanilla
- enough flour to form dough
Combine all cookie ingredients to form dough. Roll out 1/4″ thick and cut into circles (or in my case, hearts). Place cookie on parchment lined cookie sheet.
Spoon a small amount of the pineapple filling on top of the cookie, being careful not to spread filling to edges.
Place another cookie on top of the pineapple filling and press edges together slightly. Cut a small slit in the top of the cookie to vent. Sprinkle with colored sugar if desired.
Bake 375 degrees 10-15 minutes.
Remove from cookie sheet and allow to cool.
(Hint: I usually wrap these cookies individually in waxed paper and store them in a ZipLock bag in the freezer. That way they stay fresh and you can pull out just a few of these wonderful cookies when you have guests and they will be really impressed!!)
